Calamansi Juice Drink
A refreshing Filipino drink made with calamansi, cold water, and a little sugar, served over ice if desired.
Calamansi is the Philippine lime, small, thin-skinned and more aromatic than an ordinary lemon, and its juice is the default cooler on a hot afternoon or after a meal. In street stalls and carinderias it is sweetened, salted, or both, and served cold enough that a little slush comes along with it. Because the fruit varies in acid, the sugar is almost always adjusted by taste rather than by rule.
