Kunun Aduwa (Nigerian Tiger Nut Milk)
A chilled Nigerian plant drink made by blending tiger nuts with water and optional ginger and dates, then straining until smooth.
Kunun aduwa is what many northern households drink through the dry season, and it is sold in bottles at roadside stands where the glass clinks against crates. Tiger nuts are soaked first, and the mixture is blended with water, ginger or dates and then strained several times, because the grit settles and dulls the texture. Blending it smooth and straining it properly is the difference between a thin drink and something almost creamy.
