Kuih Makmur (Malaysian Peanut Cookies)

Kuih makmur is the sweet that appears at weddings and open houses during Hari Raya, when trays of it are filled and handed around alongside other kuih. A half-baked dough is spread thin and folded over a bed of roasted peanuts, and it comes out of the oven pale rather than browned. Rolling the cookies in icing sugar while they are still warm is what gives them their dusted, almost melting surface.

Ingredients

  • all-purpose flour, sifted125 g
  • ghee or unsalted butter60 g
  • fried or toasted peanuts, coarsely ground2 oz
  • powdered sugar60 g

Directions

  1. 1

Preheat the oven to 180°C. Grease or line a baking sheet.

  2. 2

Knead together the flour and ghee until you get a rough dough.

  3. 3

Divide the dough into balls about 2 inches in diameter.

  4. 4

Flatten one of the balls in the palm of your hand, making a little divot in the center.

  5. 5

Spoon about 1–2 tsp peanuts into the center of the dough. Pinch the edges of the dough together to enclose the peanuts, and gently reshape into a ball.

  6. 6

Place the filled cookies on the baking sheet. Bake 15–20 minutes until dried and a very light golden brown.

  7. 7

Carefully remove the hot cookies from the tray, and roll in powdered sugar.

  8. 8

    Let cool and serve.
