Moroccan Salad
This Moroccan salad is something that is easy to throw together, refreshing to eat, and good-looking.
A Moroccan salad is a workhorse rather than a delicate plate, built from tomatoes and peppers sturdy enough to be handled roughly and usually tossed by hand in a basin instead of arranged with tweezers. Cumin and parsley carry the seasoning while citrus does the rest. The salt and juice the tomato releases is the real dressing, so it needs no oil, and it is at its best right after cutting.
