Balsamic Dressing
Balsamic vinegar adds a tangy sweetness that complements the rich, fruity, buttery flavor of extra-virgin olive oil.
Italian restaurants are as fussy about the balsamic as the Italians are, and the expensive kind is so sharp in acidity that it must be used sparingly. Emulsifying it with olive oil is what turns the vinegar into a dressing rather than a varnish, and how much oil goes in depends on how bitter that bottle tastes. It belongs on warm bread or on plain greens, never over something already dressed.
