Greek Yogurt Sauce
This yogurt sauce is good for gyros, as a grilling baste for lamb and pork, and a dipping sauce for chips.
A thin yogurt sauce with lemon, oil and garlic is the everyday condiment of a Greek taverna table, served beside grilled meat, fried fish and vegetables. It is loosened with oil and lemon rather than thickened, so it should still pour off the spoon. The one rule is to stir it together just before it reaches the table, since it separates quickly once it sits, and plain unsweetened yogurt is what keeps the garlic from taking over.
