Greek-Style Grilled Chicken

The oregano and olive oil chicken that comes off tavern grills across Greece is built on marinating time rather than on a complicated recipe. Oregano, thyme, mint and rosemary are crushed with oil and lemon and left on the meat for hours, which is what carries the flavor past the surface. Charcoal and the close heat of the grill do the rest, and the skin only turns properly crisp when the meat is left alone.
