Flapjacks (Lower-sugar)

A cheaper, sturdier cousin of the pancake, baked in a tin instead of griddled, and it turns up in British packing tins about as often as it does at the breakfast table. Oats and golden syrup give it a set, faintly toffee character that holds a slice together in the hand. Cutting the sugar back is common, and the syrup and any dried fruit then have to do more of the binding work to stop the tray spreading in the oven.

Ingredients

  • (28 g) white granulated sugar1 oz
  • (112 g) butter4 oz
  • golden syrup, warmed2 tbsp
  • (225 g) rolled oats8 oz
  • salt0.5 tsp

Directions

  1. 1

    Preheat oven to 375 °F (180 °C).

  2. 2

Beat the butter and sugar until the mixture is creamy, then stir in the warmed golden syrup.

  3. 3

Work in the rolled oats and salt.

  4. 4

    Grease a 10 x 8-inch (about 25 x 20 cm) baking tray.

  5. 5

Press mixture into baking tin, and bake in preheated oven for 30 minutes or until brown.

  6. 6

When firm, cut into slices and leave in tin until cool.
