Doro Fitfit (Ethiopian Chicken Salad)
Doro fitfit is a delicious and vibrant dish made with shredded injera, spiced chicken, and a flavorful dressing.
Doro fitfit turns yesterday's injera into today's lunch: cold torn flatbread tossed with chicken, tomatoes and a lemon and berbere dressing until the bread softens but still holds its shape. The dish is assembled rather than cooked, so the chicken is normally poached or roasted in advance and left to cool. Restaurants set it out as a cool plate in warmer weather, and it is eaten by hand with more injera alongside.
