Awaze Tibs (Spicy Ethiopian Meat Stir-Fry)

Awaze tibs is what a shared table looks like when cooking moves fast and hot instead of slow: thinly sliced meat seared hard, then tossed with a paste of berbere and awaze that clings to the pan. The spice paste is the whole point of the dish, so it is worth mixing it ahead and letting it sit so the flavors settle into each other. It is served with injera, and the last of the sauce is mopped up with bread.
