Habas con Jamon (Broad Beans with Ham)

Broad beans reach Spain fresh in spring and as dried, salted fat for the rest of the year, and this is the plate where both meet. It is quintessentially a tapas dish, shared at the bar while the drinks arrive, and the salted ham is there for salt and richness rather than as a meat course in its own right. The beans must be cooked through, and their skins can be rubbed off between thumb and forefinger at the table.
