Stir-Fried Eggs with Onion
Eggs beaten with onion and salt, then fried in oil until just set and fragrant around the edges. One of the fastest dishes in the book.
This is the dish many people first cook away from home, because the only decision is how much onion to add. The onion goes in raw so it softens and sweetens inside the egg as it fries. A splash of cooking wine at the end keeps it from tasting flat.
