Stir-Fried Chinese Yam Leaf with Dace in Black Bean Sauce
Crisp Chinese yam leaf greens tossed with flaked dace fish from a tin, garlic and a little soy. A Cantonese pantry dish of the quickest kind.
Tinned dace is one of those cupboard staples that Cantonese cooking leans on, because it is cheap, keeps forever and brings a savoury depth no fresh fish gives for nothing. Stir it in late and off the heat so it stays as flakes rather than breaking down. This is fifteen-minute cooking, and the greens still have to snap when they hit the plate.
