Stir-Fried Chicken Liver
Chicken liver blanched to keep it silky, then quickly fried with garlic scapes, scallion and white pepper.
Chicken liver turns silky or rubbery depending almost entirely on the blanching, which makes this a dish that punishes hesitation. The scallion, garlic and white pepper here follow a northern grill bias rather than a southern one. Buying the liver fresh from a butcher rather than from a package makes the biggest difference of anything you can change.
