Stir-Fried Chicken Liver

Chicken liver turns silky or rubbery depending almost entirely on the blanching, which makes this a dish that punishes hesitation. The scallion, garlic and white pepper here follow a northern grill bias rather than a southern one. Buying the liver fresh from a butcher rather than from a package makes the biggest difference of anything you can change.
