Stir-Fried Beef with Green Peppers

This is a northern home stir-fry built on a long marinade: the beef sits with salt and soy for the better part of an hour, which is what keeps it tender through the fierce heat of the wok. The green pepper goes in before the beef so it chars slightly and takes on the smoky note that makes the dish.
