Steamed Pork Patty with Egg
A round of seasoned minced pork steamed until firm, with a whole egg set in the middle. Salty, savoury and soft, ready in about twenty minutes.
This is the kind of dish that appears when someone is tired rather than hungry, and it works because everything happens in one plate in one steamer. Nesting the egg into a well in the mince stops it from rolling around and sets it right in the middle, so every spoonful gets some. Sesame oil at the end is what a northern cook would reach for automatically.
