Steamed Mandarin Fish
A whole mandarin fish steamed until the flesh lifts in clean flakes, finished with hot oil, soy, ginger and scallion.
Steaming a whole fish is the oldest way to cook fish in the south, and mandarin fish is the one chosen for it because the flesh lifts away in clean flakes. The delicate part is timing, since over-steaming turns it dry, and the hot oil and soy poured over at the end are what wake it all up.
