Snowflake Crisps
A crisp, sweet little biscuit with a strong milky flavour, made in one pan in half an hour and easily boxed up to give away. Marshmallow, butter, milk powder and nuts all melt into one brittle mass.
The name comes from the milk powder dusting that gives the finished squares a look of fresh snow, and from the way the slab shatters rather than bends. Everything is melted in the same pan and pressed straight into the mould, so there is no kneading and no oven. Work the mixture only once it is cool enough to handle, since pulling it while hot will smear the butter and dull the finish.
Ingredients
- unsalted butter20 g
- marshmallows75 g
- whole milk powder40 g
- mixed nuts60 g
- biscuits75 g
Directions
- 1
Cut the biscuits into small pieces, roughly the size of a coin.
- 2
Put the unsalted butter in a pan and melt it completely over low heat.
- 3
Add the marshmallows and stir with a spatula until they melt and combine evenly with the butter.
- 4
Add 20g of milk powder and stir with a spatula; as soon as it is evenly combined with the butter and marshmallow, turn off the heat straight away.
- 5
While it is still hot, add all the mixed nuts and the biscuits and stir with a spatula.
- 6
Once it has cooled enough to touch, put on a disposable glove and knead it in the pan, or lift it and pull it with both hands, so the biscuits and nuts are evenly distributed through the marshmallow, butter and milk powder mixture.
- 7
Press the mixture into the mould, packing the corners firmly, flatten it with a rolling pin and press any short side straight by hand.
- 8
Leave it at room temperature, and once it is completely cold turn it out and cut it along the mould lines or into whatever size you prefer, then dust with the remaining milk powder, aiming to coat every face.
