Red Grapefruit Cake

Air fryer cakes have become a way to avoid heating the whole oven for a single portion. Red grapefruit is used here for its perfume rather than its bitterness, and the flesh is cut small so it stays suspended in the batter. Mixing the dry and wet additions in two stages, rather than all at once, is what keeps the batter free of lumps.
