Pork Rib, Yam and Corn Soup
A long-simmered clear soup of pork ribs, corn, carrot and yam, the kind that is started early and left alone while the rest of the meal is cooked.
Clear pork soup is built on the stock, not on the additions, so the ribs are blanched and fried before the water goes in to keep the broth transparent. Corn, carrot and yam are added at different stages because they cook at different rates and carrot would otherwise collapse into the soup. The old ginger slices are cooked slowly until they dry out, which releases a gentler flavour than fresh ginger.
