Pineapple Coffee Cooler
A mixed drink that brings coffee and pineapple together, sharp and sweet at once, with soda water for lift and a whipped cream cap for weight. The layers are meant to be drunk as they are.
The combination borrows from the trend of putting coffee in cold fruit drinks, and the salted cream cap is what makes it read as a designed drink rather than a blend. Salting the cream is a coffee technique: salt suppresses bitterness and pushes the sweetness of the pineapple forward. Whip the cream only to soft peaks, or it will weigh the glass down.
