Lard Rice
Plain hot rice topped with a spoonful of lard, soy sauce and scallion, tossed until every grain glistens.
Lard rice is the dish that tells you where a cook stands. In the south of China it is a breakfast staple built on the rendered fat left over from cooking pork belly; elsewhere it is nostalgia for a canteen or a grandmother's kitchen. There is no technique to hide behind, which is exactly why people take it seriously: the lard has to be warm enough to melt and the soy has to be added while the rice is still hot.
