Edamame Simmered with Preserved Plums
Edamame pods simmered with sour preserved plums until the beans are soft and carry the fruit's sweet-tart fragrance.
Preserved plums belong to the fruit-eating traditions of the Chaoshan area and of the south in general, where they are used both as a snack and as seasoning. Simmering them with edamame borrows that sourness for a dish that is eaten as it is, straight from the pot. Pods take far longer than shelled beans, so plan on giving them most of an hour.
