Citrus Tea

Pabagan, the soft-skinned citrus called citron in the West, is at its best in late autumn, when the fruit is loose on the tree and heavy with juice. Vendors peel and juice it fresh, and the same fruit is used for both hot and iced versions. The tea here is brewed strong and poured over plenty of ice, the usual summer way to drink jasmine green tea in southern China.
