Bánh Flan Hấp (Vietnamese Steamed Milk Flan)
A delicate steamed milk custard with caramel sauce.
Bánh flan is a colonial-era pudding that arrived with the French and stayed, and this steamed version suits Vietnamese kitchens better than the baked one. The caramel is cooked dark and poured into the ramekin first, so the custard turns out with a layer of syrup on top. Steaming gives a texture closer to a panna cotta than to a baked custard, and it does not crack.
