Pumpkin Pie (American Classic)

Pumpkin pie is a thanksgiving fixture, and the cans of pumpkin used in most American recipes are drier than the fresh flesh, which is why they work at all. The spice blend is whatever the house argues for, and nobody has ever agreed to a canonical one. It must be served at room temperature, not warm, which surprises people.
