Meatloaf (American Classic)

Meatloaf traces back to kofta and the meatloaf of the immigrant kitchens, and the texture is meant to hold a slice rather than crumble, which takes more bread than most people use. The tomato topping is applied partway through so it caramelises without burning. Served with mashed potato, it is the dish most often called comfort.
