Hush Puppies (Southern US Cornmeal Fritters)
Crisp deep-fried cornmeal fritters, golden outside and tender inside.
The name is a joke that stuck, and nobody agrees whether they were so named to quiet the dogs during fish frying or because cooks told the children to stop asking. They are the scraps of the cornmeal batter fried alongside the fish, which is why they are best eaten straight from the pot with the meal they belong to.
