Cornbread (American Buttermilk Cornbread)
A tender crumbly cornbread made with buttermilk and a touch of honey.
Cornbread came north with the slavery economy and settled into two styles that are still divided: a dense southern version that is almost a cake, and a sweeter northern one. The buttermilk tenderises the meal, and the honey is for the crumb rather than for sweetness. Bake it in a hot pan so the sides colour faster than the middle.
