Revani (Turkish Semolina Cake in Lemon Syrup)

Revani is a semolina cake soaked with syrup while still warm, and that is the only way it works, because the syrup has to reach the centre. Rose water and lemon are both acceptable and cooks argue about which one belongs. It is served in squares, often at the end of a meal rather than as a birthday cake.
