Lahana Sarmasi (Turkish Vine Leaf Rolls)

Stuffed vine leaves reach the Turkish table through the eastern and Mediterranean kitchens, and the leaves are blanched so they roll without splitting. The rice goes in raw to the meat filling and cooks inside the parcel. Cook them tightly packed and weighted, laid seam side down so they do not open.
