Künefe (Shredded Pastry with Cheese and Syrup)
Crisp shredded pastry layered with melted cheese and soaked in rose-tinged syrup.
Künefe is built on cheese that stretches, and the syrup goes on while the pastry is still hot enough to hiss. The shredded filo is pulled apart by hand rather than chopped, which is what gives the strands their length. It belongs to the sweet shops of the eastern Mediterranean, where it is cut into squares and sold by weight.
