Pasteis de Nata (Portuguese Custard Tarts)

Pasteis de nata are sold from bakeries and cafes across the country now, which means the custard ranges from the monastery standard down to something set, pale and disappointing. The version worth hunting for has a top that has blistered in a very hot oven and a centre that still moves when the tray is tapped. They are at their best just warm, not hot.
