Mousse de Maracuja (Portuguese Passion Fruit Mousse)

Passion fruit mousse is a Portuguese summer dessert, common where the fruit grows in the Atlantic islands and along the mainland coast. The shells and seeds stay in the mousse, which gives it both its colour and a slight bitterness that cuts the cream. It is meant to be eaten cold and quickly, before the fruit sinks and the top goes flat.
