Caldo Verde a Minhota (Northern Portuguese Kale Soup)

The Minho version of caldo verde comes from a green, wet stretch of northern coast where kale grew in nearly every yard, and it is much lighter than its colour suggests. Potato and water do the body, the kale goes in almost at the end, and chouriço is the only rich element in the bowl. It tastes most like itself in cold, damp weather.
