Bacalhau à Brás (Portuguese Salt Cod with Eggs and Potatoes)
Shredded salt cod tossed with matchstick potatoes, onions and scrambled eggs, garnished with olives and parsley.
This brás version is cooked at family scale, where the salt cod is torn into flakes by hand rather than chopped, and the pan gets a scattering of olives at the end for salt and bite. Made in one wide pan over low heat, it never browns, which is correct. It is served in small squares straight from the dish, since it firms as it cools and wants to be lifted with a fork.
