Arroz de Ovos (Portuguese Rice with Egg and Peas)
Soft rice studded with fried egg and peas in a light tomato sauce.
Arroz de ovos is home cooking rather than restaurant cooking: a soft tomato rice into which fried egg and peas are stirred at the last moment, so the yolk colours the whole pot. It is the sort of plate made when there is rice left and an egg that needs using. Adding the egg earlier dries it out and leaves the grains sitting in sauce.
