Leche Flan with Llanera (Filipino Caramel Flan with Egg Lattice)
Silky caramel custard topped with a llanera egg lattice.
The llanera lattice is the Filipino finish on the flan, and the word points to a province that gave the sweet to the country. Egg is beaten over the caramel custard in a light web, and it sets with the steam so it stays attached as the flan is turned out. It is the version served at parties, where the grid of egg catches the light and the syrup runs across it.
