Chicken Adobo (Vinegar-Braised Chicken with Soy and Bay Leaves)
Chicken braised in soy sauce, cane vinegar, garlic and bay leaves until the sauce reduces to a glossy glaze.
Adobo is the dish Filipino cooks argue about most fiercely, and the real split is between households that add vinegar early and those that add it late. Chilling the marinated meat overnight before it meets the heat is what turns ordinary chicken into something with a glossy, faintly sweet coating. Bay leaves are a regional habit rather than a rule, and leftover adobo reheats even better than it starts.
