Sopa de Maiz (Peruvian Corn and Chicken Chowder)

A corn soup built for comfort rather than show, where the corn is simmered long enough with the chicken bones to give the broth sweetness without any cream. Potato thickens it and the milk goes in at the end, which keeps the colour pale and the texture silky. In Peru, corn soup is what a household reaches for when something in the day has gone wrong.
