Lomo Saltado (Peruvian Beef Stir-Fry with Fries)

Lomo saltado is the chifa dish that carries the Chinese wok and the Peruvian ají amarillo at once, usually served with rice and fries so the sauce has somewhere to go. The beef is seared hard in a very hot pan to build a crust before the vegetables go in, and the tomato is added late enough to keep some shape. Its heat is understood to be a dish for the morning after.
