Chaufa Chaufa (Peruvian Fried Rice with Vegetables)
Day-old rice fried hard with peas, carrot, corn and egg.
Chaufa chaufa is Chinese fried rice with Peruvian groceries, and the version from Chinatown in Lima is traditionally made with the day-old rice the shop keeps for congee. That older rice fries without turning to paste, which is the whole trick. Vegetables go in early and the egg is scrambled separately, then folded through at the end.
