Arroz con Pato (Peruvian Duck Rice)
A cilantro-green duck rice cooked with coriander and beer.
Arroz con pato is the celebration rice that Sunday lunches are organised around, heavier and greener than its chicken cousin because duck fat and coriander both go in. The cook browns the duck first and sets the rice aside to fry in the rendered fat, which is where the rice gets its character. It is served in generous platters, refilled as often as the table allows.
