Whitebait Fritters
Delicate whole whitebait bound in a light egg batter and pan-fried until just set, served with lemon.
Whitebait is the small fish of the migrating river shoals, and it is a New Zealand summer tradition rather than a fish course from anywhere else. Cook the whole fish whole and only briefly, so the bones stay soft enough to eat along with the flesh. Season simply, squeeze lemon over, and eat it standing up at the seaside.
