Whero Roti (Māori Corn and Watercress Chowder)

Whero roti is a corn chowder thickened by the corn itself, with pork and watercress giving it body and a green note. Simmer the watercress in the broth first and fish it out before blending, or the soup turns grassy. Sweet corn kernels cut off the cob go in late so they stay distinct, and it is eaten with the bread from the same grill.
