Pāua Fritter (New Zealand Abalone Fritter)

Pāua is an abalone found along the New Zealand coast, and it has to be sliced thin across the grain and cooked quickly or it turns rubbery. Pat the pieces dry before they go into the batter. The fritter is fried at once and eaten hot, since it loses its character as it cools.
