Puff Puff (Nigerian Sugar Fried Dough Balls)

This version is kept plain, so the quality of the dough is on show without anything rolled onto it. The dough rests until it has nearly doubled and must go into the fat at a lower heat than instinct suggests, or the outside darkens before the inside cooks. Sugar goes on after, while the surface is still tacky.
