Nkwobi (Nigerian Cow Foot Stew)
Spicy cow foot simmered in a thick palm oil sauce with utazi and ugu leaves.
Nkwobi is an Igbo dish of cow feet cooked until the meat gives up its collagen, which is what makes the sauce cling to a spoon. The feet are first boiled to draw out the gristle, then simmered in a palm oil sauce with utazi and ugu. It is served at gatherings and pairs with swallow or pounded yam, and the sauce is meant to be eaten as much as the meat.
