Banga Soup (Nigerian Palm Fruit Soup)
A rich soup of palm fruit, beef and assorted meats, scented with native spices.
Banga is a southeastern soup where the base is palm fruit boiled down, giving a natural sweetness and a body no stock can reproduce. It is traditionally cooked in a pot over wood, and the pulp is worked through a sieve before the meat goes in. The result tastes faintly of wine and very much of the oil, and it is served for festivals rather than daily cooking.
